Do you own, manage or work in a food business?

If you do, the requirements of the Food Hygiene Regulations affect YOU!

 
 
If you were to receive a complaint of food poisoning, or a visit from an Environmental Health Officer, could you demonstrate that you have taken 'reasonable precautions' and that you can demonstrate 'due diligence'?
 
Generally, anyone who handles food, or whose actions could affect its safety, must follow the Regulations. This includes people who sell food (whether to retailers or to the public or even in the village hall!).

If you are involved in a food business you MUST:
Make sure food is supplied or sold in a hygienic way;
Identify food safety hazards;
Know which steps in your activities are critical for food safety;
Ensure that safety controls are in place, maintained and reviewed.
 
A lot of the requirements are followed by the words 'where appropriate' or 'where necessary'. This leaves you to decide what is required in your particular circumstances.
 
 
  Controls do not have to be complex, but they must be effective. Are you confident that your systems are effective? Do you keep accurate records? Are your staff trained to the appropriate level?
 
  Can you demonstrate 'Due Diligence'?
